Gujarati Dal with Coconut
Ingredients

- ghee2 tablespoons
- mustard seeds1 teaspoon
- cumin seeds1 teaspoon
- asafoetida1/4 teaspoon

- jaggery1 tablespoon
- lemon juice2 tablespoons

- water4 cups
- grated coconut1/4 cup
- chopped coriander leaves2 tablespoons

Rinse the toor dal thoroughly under running water until the water runs clear.

In a pressure cooker, add the rinsed toor dal and 4 cups of water. Cook for 3-4 whistles or until the dal is soft and mushy.

Once the pressure releases, open the cooker and mash the dal slightly with a ladle.

In a pan, heat the ghee over medium heat. Add mustard seeds and let them splutter.

Add cumin seeds and asafoetida, and sauté for a few seconds.

Add the slit green chilies and sauté for another minute.

Add the mashed dal to the pan along with turmeric powder, jaggery, and salt. Mix well.
