Cook the noodles according to the package instructions. Drain and set aside.

Heat 2 tbsp oil in a large wok or pan over medium-high heat.

Add the sliced onion and sauté for 2-3 minutes until translucent.

Add the julienned carrot and thinly sliced potato. Stir-fry for 4-5 minutes until they begin to soften.
