1Heat the vegetable oil in a large pot over medium heat.
Add the finely chopped onions and sauté until they turn golden brown.
Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2-3 minutes.
Add the mutton pieces to the pot and stir well to coat them with the spices.
Pour in the water and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 45-60 minutes, or until the mutton is tender.
Stir in the garam masala and cook for another 5 minutes.
Garnish with fresh coriander leaves before serving.
