Peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.
While the potatoes are cooking, finely chop the onion and carrot.
Heat
5 tbsp olive oil in a large skillet over medium heat. Add the chopped onion and carrot, and sauté for 5 minutes until softened.
Add the lean ground lamb to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through, about 6-8 minutes.
Stir in the Worcestershire sauce, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
Preheat your oven to 200°C (390°F).
Drain the cooked potatoes and mash them until smooth. Add a pinch of salt if desired.
Spread the lamb and vegetable mixture evenly in the bottom of a baking dish. Top with the mashed potatoes, spreading them out to cover the filling completely.
Use a fork to create a pattern on top of the mashed potatoes for a crispy finish.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
Remove from the oven and let rest for a few minutes before serving. Enjoy your Classic Shepherd's Pie!
