1Heat a non-stick pan over medium heat.
Crack the eggs into a bowl and add the salt and black pepper. Whisk until well combined.
Pour a portion of the egg mixture into the pan, spreading it evenly to form a thin layer.
Place one parrahta on top of the egg while it is still slightly runny, pressing gently.
Once the egg is cooked and set, flip the parrahta to cook the other side for about 1-2 minutes.
Remove the parrahta from the pan and roll it up tightly.
Repeat the process with the remaining eggs and parrahtas.
Serve the spiced egg parrahta rolls warm, optionally with a side of chutney or yogurt.
