1Rinse the brown rice under cold water until the water runs clear.
In a large pot, heat the coconut oil over medium heat.
Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.
Add the rinsed brown rice to the pot and stir to coat the rice with the oil, onion, and garlic mixture.
Pour in the coconut milk and 2 cups of water, then add the cooked red kidney beans.
Stir in the thyme, allspice, and salt to taste.
Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 40-45 minutes, or until the rice is fully cooked and the liquid is absorbed.
Fluff the rice with a fork and serve hot.
