Heat a pan on medium flame and dry roast 1 cup of semolina (sooji) until it turns light golden brown. Set aside.

In the same pan, heat 2 tablespoons of ghee.

Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 teaspoon of urad dal and 1 teaspoon of chana dal. Fry until they turn golden brown.

Add 1 medium finely chopped onion, 2 finely chopped green chilies, 1 inch grated ginger, and 10-12 curry leaves. Sauté until the onions turn translucent.

Add 1 medium finely chopped carrot, 1/4 cup green peas, and 1/4 cup chopped bell pepper. Cook for 2-3 minutes.

Add 2 cups of water and salt to taste. Bring the mixture to a boil.

Gradually add the roasted semolina while continuously stirring to avoid lumps.

Cook on low flame until the semolina absorbs all the water and reaches a thick consistency.
