1Preheat your oven to 200°F (93°C). Line two large baking sheets with aluminum foil and place wire racks on top of each sheet.
In a small bowl, mix together the brown sugar, bourbon, and black pepper until well combined.
Lay the bacon slices in a single layer on the wire racks. Brush both sides of each bacon slice generously with the brown sugar bourbon mixture.
Place the baking sheets in the oven and bake for 2 to 3 hours, flipping the bacon halfway through and brushing with more of the mixture if desired. Bake until the bacon is deep golden brown and has a jerky-like texture.
Remove the bacon from the oven and let it cool completely on the racks. The bacon will continue to firm up as it cools.
Store the jerky in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week.
