Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.
Pour in the beef broth, diced tomatoes (with their juice), and tomato sauce. Stir to combine.
Add the dried basil, dried oregano, and red pepper flakes. Season with salt and pepper to taste. Bring the mixture to a boil.
Once boiling, add the broken lasagna noodles. Reduce the heat to a simmer and cook until the noodles are tender, about 10-12 minutes.
In a separate bowl, mix together the ricotta cheese, shredded mozzarella cheese, and grated Parmesan cheese.
Once the noodles are cooked, ladle the soup into bowls. Top each bowl with a generous dollop of the cheese mixture.
