1Preheat your oven to 200°C (390°F).
Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions, usually until they float to the surface (about 2-3 minutes). Drain well.
In a large ovenproof skillet or baking dish, heat 1 tbsp olive oil over medium heat. Add the drained gnocchi and sauté for 2-3 minutes until lightly golden.
Pour the marinara sauce over the gnocchi and gently stir to coat evenly.
Arrange the sliced mozzarella cheese evenly over the top of the gnocchi and sauce.
Sprinkle the grated Parmesan cheese over the mozzarella.
Transfer the skillet or baking dish to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly with golden spots.
Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
