1Prepare the shrimp by peeling and deveining them if necessary.
Chop the broccoli florets, red bell pepper, and yellow bell pepper into bite-sized pieces.
Mince the garlic and grate the ginger.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the garlic and ginger to the skillet and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the broccoli, red bell pepper, yellow bell pepper, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
In a small bowl, mix together the soy sauce, sriracha, and sesame oil.
Return the shrimp to the skillet and pour the sauce mixture over the shrimp and vegetables. Stir well to combine and cook for an additional 2 minutes.
Garnish with chopped green onions and serve hot.
