Wash and roughly chop the fresh spinach. Sauté the spinach in 1 tbsp of olive oil over medium heat for 2-3 minutes until wilted. Set aside to cool.

In a mixing bowl, combine the ricotta cheese, sautéed spinach, half of the grated parmesan cheese (20g), and a pinch of salt and pepper. Mix well.

Divide the pizza dough into two equal portions. Roll out each portion into a round disc about 30 cm (12 inches) in diameter.

Place one dough disc on a parchment-lined baking tray. Spread the ricotta and spinach mixture evenly over the dough, leaving a 2 cm (1 inch) border around the edge.

Evenly distribute the mozzarella cheese, sliced black olives, roasted red peppers, artichoke hearts, sun-dried tomatoes, and sliced mushrooms over the ricotta mixture.
