Preheat your oven to 200°C (392°F).
Cut the chicken breast into bite-sized pieces.
Peel and slice the carrots, chop the onion, dice the tomatoes, and slice the red bell pepper.

Grate the cheese and sprinkle it evenly over the top of the chicken and vegetable mixture.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
