Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.

In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is tender and water is absorbed, about 15-20 minutes. Fluff with a fork and set aside.

In a large pan, heat the vegetable oil over medium heat. Add the mustard seeds and cumin seeds. When they start to splutter, add the curry leaves.

Add the finely chopped onion and sauté until golden brown.
