1Rinse the rice under cold water until the water runs clear. Set aside.
Dice the pork into bite-sized pieces.
Chop the tomatoes and onion into small pieces.
Mince the garlic cloves.
In a large pan, heat a little oil over medium heat. Add the pork and cook until browned on all sides.
Add the chopped onion and minced garlic to the pan. Sauté until the onion becomes translucent.
Stir in the chopped tomatoes and cook for a few more minutes until they start to soften.
Add the rice to the pan and stir well to combine all ingredients.
Pour in enough water to cover the rice by about 1 inch. Bring to a boil.
Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff the rice with a fork and serve hot.
