Rinse the chana dal thoroughly and soak it in water for about 30 minutes.
Drain the water and cook the chana dal in a pressure cooker with enough water until it becomes soft. This should take about 3-4 whistles.
Once cooked, drain any excess water and mash the dal to a smooth consistency.
In a pan, add the mashed chana dal and jaggery. Cook on a low flame until the jaggery melts and blends with the dal.
Add cardamom powder to the mixture and continue to cook until it thickens. Set aside to cool.
In a bowl, mix all-purpose flour with a pinch of salt and enough water to make a smooth, pliable dough. Let it rest for 15-20 minutes.
Divide the dough into small balls and roll each ball into a small circle.
Place a spoonful of the chana dal and jaggery mixture in the center of the dough circle.
Fold the edges over the filling and roll it out gently into a thin crepe.
Heat a non-stick pan and add a little ghee. Cook the crepe on both sides until golden brown.
Repeat the process for the remaining dough and filling.
Serve the Puran Poli Crepes warm with a dollop of ghee on top.
