Rinse the chana dal thoroughly and soak it in water for about 30 minutes.
Drain the water and cook the chana dal in a pressure cooker with enough water until it becomes soft.
Once cooked, drain any excess water and mash the dal to a smooth consistency.
In a pan, add the mashed chana dal and jaggery. Cook on a low flame until the jaggery melts and blends with the dal.
Add cardamom powder to the mixture and cook until it thickens. Let it cool.
In a bowl, mix whole wheat flour, a pinch of salt, and water to make a soft dough. Let it rest for 15-20 minutes.
Divide the dough and the dal-jaggery mixture into equal portions.
Roll out a portion of the dough into a small circle, place a portion of the filling in the center, and fold the edges over the filling.
Gently roll out the stuffed dough into a flat circle, being careful not to let the filling spill out.
Heat a tawa or skillet and cook the puran poli on both sides, applying ghee, until golden brown.
Serve warm with a dollop of ghee.
