Soak the chickpeas in water overnight or for at least 8 hours.
Drain and rinse the chickpeas. Cook them in a pressure cooker with enough water until they are soft (about 20-25 minutes).
Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them splutter.
Add the finely chopped onion and sauté until golden brown.
Add the ginger garlic paste and sauté for another 2 minutes.
Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
Add the turmeric powder, chili powder, and salt. Mix well.
Add the cooked chickpeas along with some of the cooking water. Mix well and let it simmer for 10-15 minutes.
Add the garam masala and mix well. Let it cook for another 2-3 minutes.
Garnish with fresh coriander leaves and serve hot with rice or naan.
