Rinse the toor dal thoroughly under running water and soak it for about 30 minutes.
In a pressure cooker, add the soaked toor dal, chopped tomatoes, chopped onion, green chilies, turmeric powder, and enough water to cover the ingredients. Pressure cook for 3-4 whistles until the dal is soft.
Once the pressure releases, mash the dal mixture slightly with a ladle.
In a separate pan, heat oil over medium heat. Add mustard seeds and let them splutter.
Add cumin seeds, dried red chilies, and curry leaves. Sauté for a few seconds until fragrant.
Add the cooked dal mixture to the pan. Stir well and add red chili powder and salt to taste.
Let the mixture simmer for 5-10 minutes, allowing the flavors to meld together.
Garnish with chopped coriander leaves before serving.
Serve hot with steamed rice or roti.
