Vegetarian Spinach Lasagna
Ingredients
- lasagna noodles12 pieces
- fresh spinach5 cups
- ricotta cheese15 ounces

- mozzarella cheese3 cups
- Parmesan cheese1 cup
- marinara sauce24 ounces
- mushrooms1 cup
- zucchini1 cup
- yellow squash1 cup

Preheat your oven to 375 degrees F (190 degrees C).

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. Set aside.

In a large skillet, sauté mushrooms, zucchini, and yellow squash until slightly tender. Set aside.

In a mixing bowl, combine ricotta cheese with egg, remaining salt, nutmeg, and black pepper. Stir in fresh spinach.

To assemble, spread 1/3 of the marinara sauce in the bottom of a 9x13 inch baking dish. Layer 1/3 of the noodles, half of the ricotta mixture, half of the sautéed vegetables, 1/3 of the mozzarella cheese, and 1/3 of the Parmesan cheese. Repeat layers, and top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.

Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes to allow cheese to brown. Serve hot.
