1Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds, cinnamon stick, and bay leaves. Sauté until they start to sputter.
Add the chopped onions and cook until they turn golden brown.
Add the minced garlic and ginger, and sauté for another minute until fragrant.
Add the mutton pieces to the pot and brown them on all sides.
Stir in the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook for a couple of minutes.
Pour in the pureed tomatoes and mix well. Cover the pot and let it simmer for about 10 minutes, stirring occasionally.
Add the cubed potatoes to the pot and stir to combine.
Pour in the water and bring the curry to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 to
5 hours, or until the mutton is tender.
Check the seasoning and adjust if necessary. Add the garam masala and simmer for another 5 minutes.
Garnish with fresh cilantro before serving. Serve hot with rice or naan bread.
