1Cut the beef into 2-inch cubes.
Blend the garlic, shallots, ginger, and galangal into a paste.
Heat the vegetable oil in a large pot over medium heat.
Add the blended paste and cook until fragrant, about 5 minutes.
Add the chili paste, turmeric powder, coriander powder, and cumin powder. Stir well.
Add the beef cubes and cook until they are browned on all sides.
Pour in the coconut milk and add the lemongrass stalks, kaffir lime leaves, tamarind paste, and palm sugar.
Bring to a boil, then reduce the heat to low and simmer uncovered for 2-3 hours, stirring occasionally.
Cook until the beef is tender and the sauce has thickened. Add salt to taste.
Serve hot with steamed rice.
