Grate the medium cauliflower finely and set aside.
In a mixing bowl, add 2 cups of whole wheat flour and a pinch of salt. Gradually add water and knead into a soft dough. Cover and let it rest for 15-20 minutes.
Heat 1 tablespoon of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter.
Add the grated cauliflower to the pan and sauté for 2-3 minutes.
Add 1 teaspoon of coriander powder, 1 teaspoon of garam masala, 1 teaspoon of red chili powder, and salt to taste. Mix well and cook for another 2-3 minutes until the cauliflower is cooked. Let it cool.
Divide the dough into equal portions and roll each portion into a small ball.
Flatten a dough ball slightly, place a spoonful of the cauliflower mixture in the center, and fold the edges over to seal it.
Gently roll the stuffed dough ball into a flat disc, being careful not to let the filling spill out.
Heat a tawa or skillet over medium heat. Place the rolled paratha on the tawa and cook for 1-2 minutes on each side, applying a little oil, until golden brown and cooked through.
Repeat the process with the remaining dough and filling.
Serve the cauliflower stuffed parathas hot with yogurt or pickle.
