Rinse the long grain rice thoroughly in cold water until the water runs clear. Set aside.
Blend the fresh tomatoes and red bell pepper together until smooth. Set aside.
In a large pot, heat the groundnut oil over medium heat. Add the grated ginger and minced garlic, and sauté for 1 minute until fragrant.
Add the goat meat chunks to the pot and brown on all sides for about 5 minutes.
Stir in the blended tomato and pepper mixture, and cook for 10 minutes, stirring occasionally.
Add the tomato paste, curry powder, Maggi seasoning cubes, and salt. Mix well and cook for another 5 minutes until the oil begins to separate from the tomato mixture.
Pour in 3 cups of water and bring to a boil. Add the rinsed rice and stir to combine.
Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent burning.
Once the rice is cooked, fluff with a fork and allow to rest for 5 minutes before serving.
