Knead the dough for about 5-7 minutes until smooth. Cover and let it rest for 30 minutes.
Divide the dough into equal portions and roll each portion into a ball.
On a floured surface, roll out each ball into a flat, round disc about 1/4 inch thick.
Heat a skillet over medium heat and lightly grease with a small amount of vegetable oil.
Cook each roti on the skillet for about 2-3 minutes on each side until lightly browned and cooked through.
For the spinach and potato filling, peel and dice the potatoes into small cubes.
Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
Add the diced potatoes to the pan and cook for about 10 minutes, stirring occasionally.
Add the spinach to the pan and cook until wilted, about 3-4 minutes.
Season the spinach and potato mixture with salt to taste.
Serve the sada roti warm with the spinach and potato filling.
