1Slice the turkey breast into thin strips.
Chop the red bell pepper, yellow onion, potato, and yellow squash into bite-sized pieces.
Mince the garlic cloves.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the turkey strips to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the turkey from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the chopped onion and potato to the skillet and cook for about 5 minutes, stirring occasionally.
Add the red bell pepper and yellow squash to the skillet and continue to cook for another 5 minutes, or until the vegetables are tender.
Return the cooked turkey to the skillet and stir to combine.
Add the soy sauce and black pepper, stirring well to coat all the ingredients.
Cook for an additional 2-3 minutes to heat through.
