Cut the chicken breasts into large, evenly sized pieces and pat them dry.
Heat 1 tablespoon of the olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Simmer gently for 15–20 minutes, stirring occasionally, until the sauce has thickened and the chicken reaches an internal temperature of 74°C (165°F).
Remove from the heat and let the chicken cacciatore rest for 5 minutes before serving.
