1Wash and chop the zucchinis, onion, carrots, and celery into small pieces.
In a large pot, heat the olive oil over medium heat.
Add the chopped onion, carrots, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
Add the chopped zucchinis to the pot and cook for another 5 minutes.
Pour in the vegetable broth and bring the mixture to a boil.
Reduce the heat and let it simmer for about 15-20 minutes until all the vegetables are tender.
Add the fresh basil and thyme to the pot.
Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth.
Season with salt and pepper to taste.
