While the tuna is baking, heat the remaining tablespoon of olive oil in a separate pan over medium heat.
Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
Remove the tuna from the oven and let it rest for a few minutes.
Zest the lemon over the tuna steaks and squeeze the lemon juice on top.
Serve the tuna saltimbocca over a bed of wilted spinach. Enjoy!
