In a medium saucepan, combine 120ml water, 40ml vegetable oil, and a pinch of salt. Bring to a boil over medium heat.
Remove the saucepan from heat and add 150g all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the pan.
Let the dough cool for 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Transfer the dough to a piping bag fitted with a star tip.
Heat oil in a deep pan or fryer to 180°C (350°F) if you wish to deep-fry, or preheat your oven to 200°C (400°F) if you prefer to bake.
Pipe small bite-sized pieces of dough onto a parchment-lined baking sheet (for baking) or directly into the hot oil (for frying), cutting with scissors.
Fry the churro bites in batches until golden brown and crisp, about 2-3 minutes per batch. If baking, bake for 15-18 minutes until golden and puffed.
In a shallow bowl, mix 50g granulated sugar with 2 tsp ground cinnamon.
While the churro bites are still warm, roll them in the cinnamon sugar mixture to coat evenly.
Serve warm and enjoy your Cinnamon Sugar Churros Bites!
