Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 20 minutes, then drain.

Heat the oil in a large pan over medium heat. Add the mustard seeds and cumin seeds. Let them splutter.

Add the chopped onion and sauté until it turns golden brown.

Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.

Add the chopped green chilies and curry leaves, and sauté for a few seconds.

Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes become soft and the oil starts to separate from the mixture.

Add the soaked and drained rice to the pan. Mix well to coat the rice with the tomato mixture.

Add 400 ml of water to the pan. Bring it to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the water is absorbed.
