1Peel the potatoes and cut them into thin matchstick-sized strips or small cubes.
Peel and thinly slice the onions.
Crack the eggs into a bowl, add the salt, and beat them well until combined.
Heat the sunflower oil in a large non-stick skillet or wok over medium heat.
Add the sliced onions and sauté for 2-3 minutes until they start to soften.
Add the potatoes to the pan and stir fry for 8-10 minutes, stirring occasionally, until the potatoes are cooked through and lightly golden.
Push the potatoes and onions to one side of the pan. Pour the beaten eggs into the empty side and let them set for about 30 seconds.
Gently scramble the eggs, then mix them with the potatoes and onions. Stir fry everything together for another 1-2 minutes until the eggs are fully cooked and well combined with the vegetables.
Taste and adjust salt if needed. Serve hot.
