Preheat your oven to 200°C (400°F).
Wash the potatoes thoroughly and pierce each one several times with a fork. Place them on a baking tray and bake for 50-60 minutes, or until tender.

Spoon the chicken mixture back into the potato shells, dividing it evenly among the four potatoes.
Sprinkle the remaining parmesan cheese (20g) over the stuffed potatoes.
Return the stuffed potatoes to the oven and bake for an additional 10-12 minutes, until the cheese is melted and golden.
