Preheat your oven to 200°C (400°F).

Wash the potatoes thoroughly and pierce each one several times with a fork. Place them on a baking tray and bake for 50-60 minutes, or until tender.

While the potatoes are baking, heat 1 tbsp olive oil in a skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.

Add the diced chicken breast to the skillet. Season with 1/2 tsp salt and 1/2 tsp black pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through.

Add the diced tomatoes to the skillet and cook for another 3-4 minutes, until the tomatoes soften and the mixture is well combined. Remove from heat.

Once the potatoes are baked and cool enough to handle, cut a slit along the top of each potato and gently scoop out some of the flesh, creating a cavity. Be careful not to break the skin.

Mix the scooped-out potato flesh into the chicken and tomato mixture. Stir in half of the grated parmesan cheese (20g).

Spoon the chicken mixture back into the potato shells, dividing it evenly among the four potatoes.
