- large shrimp, peeled and deveined1 lb
- spaghetti or linguine8 oz
- garlic, minced4 cloves
- red pepper flakes1/2 tsp
- olive oil2 tbsp
- white wine1/4 cup
- chicken or vegetable broth1/2 cup
- lemon juice1 tbsp
- Saltto taste
- pepperto taste
- Fresh basil, choppedfor garnish
- Grated Parmesan cheeseoptional
Instructions
- 1
Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- 2
While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic is fragrant but not browned.
- 3
Increase the heat to medium-high and add the shrimp to the pan. Season with salt and pepper, and cook for 1-2 minutes on each side, or until the shrimp turn pink and are cooked through.
- 4
Remove the shrimp from the pan and set aside. In the same pan, add the white wine and lemon juice, scraping any bits off the bottom of the pan. Allow the wine to reduce by half, about 2 minutes.
- 5
Add the chicken or vegetable broth to the pan and bring to a simmer. Let it simmer for 3-4 minutes to reduce slightly.
- 6
Return the shrimp to the pan and toss to coat in the sauce. Then, add the cooked pasta and toss everything together until the pasta is well coated with the sauce.
- 7
Remove from heat, check for seasoning and adjust with more salt and pepper if needed.
- 8
Serve the pasta in bowls, garnished with chopped fresh basil and grated Parmesan cheese if desired.
