Add the diced potatoes to the skillet and cook until they are tender, about 10-12 minutes. Stir occasionally.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
In a large bowl, whisk together the eggs, flour, salt, and pepper.
Pour the egg mixture over the potatoes and onions in the skillet. Stir gently to combine.
Sprinkle the shredded cheese evenly over the top of the mixture.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is golden brown.
Remove the skillet from the oven and let the frittata cool for a few minutes before slicing and serving.
