Rinse the green grams (mung beans) thoroughly and soak them in water for at least 4 hours or overnight.
Drain the soaked green grams and set them aside.
Heat the vegetable oil in a large pot over medium heat.

Add the finely chopped onion and sauté until it turns golden brown.

Add the drained green grams and mix everything together.
Pour in the water and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes or until the green grams are tender and cooked through.
Stir in the garam masala and let it cook for another 5 minutes.
Garnish with fresh coriander leaves before serving.
Serve hot with rice or roti.
