1Heat the vegetable oil in a large pot over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the finely chopped onions and sauté until they turn golden brown.
Stir in the ginger-garlic paste and cook for another minute.
Add the pureed tomatoes and cook until the oil starts to separate from the mixture.
Mix in the coriander powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
Add the mutton pieces and stir well to coat them with the spice mixture.
Pour in enough water to cover the mutton, bring to a boil, then reduce the heat to low.
Cover and simmer for about 45-60 minutes, or until the mutton is tender.
Stir in the garam masala and cook for another 5 minutes.
Garnish with fresh coriander leaves before serving.
