1Rinse the white rice under cold water until the water runs clear to remove excess starch.
In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1 tablespoon of olive oil. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
While the rice is cooking, zest the lemon and then juice it, setting both aside.
When the rice is done, remove it from the heat and let it sit, covered, for 5 minutes to steam.
Fluff the rice with a fork and stir in the lemon zest, lemon juice, and chopped fresh dill. Season with salt and pepper to taste.
Serve the lemon dill rice warm as a side dish or as a base for a main course.
