Cut the paneer into 1-inch cubes and set aside.
Wash and trim the peapods. Slice the red bell pepper and onion into thin strips.
Finely chop the garlic, ginger, and green chilies.
Heat 1 tablespoon of vegetable oil in a large non-stick pan or wok over medium-high heat. Add the paneer cubes and sauté until golden on all sides (about 3-4 minutes). Remove and set aside.
Add the remaining 1 tablespoon of oil to the pan. Add the chopped garlic, ginger, and green chilies. Sauté for 1 minute until fragrant.
Add the sliced onion and red bell pepper. Stir-fry for 2 minutes until they start to soften.
Add the peapods and continue to stir-fry for another 2 minutes, keeping the vegetables crisp.
Return the paneer to the pan. Add soy sauce, chili garlic sauce, black pepper, red chili flakes, and salt to taste. Toss everything together and stir-fry for 2-3 minutes until well combined and heated through.
Taste and adjust seasoning if needed. Serve hot as a main dish or with steamed rice or noodles.
