Warm the whole milk to approximately 38–43°C (100–110°F). Stir in the active dry yeast and a small pinch of the granulated sugar. Let the mixture stand for 5–10 minutes, until foamy.

Prepare the glaze by whisking the powdered sugar with the water and the remaining vanilla extract until smooth. If necessary, adjust the consistency with a few drops of water.
Dip each warm doughnut into the glaze, coating one or both sides. Return the doughnuts to the wire rack and let the glaze set for 10–15 minutes before serving.
