Ingredients

Boil the potatoes until they are tender. Peel and mash them, then set aside.

Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add mustard seeds and let them splutter.

Add chopped onions and sauté until they turn golden brown.

Add chopped green chilies, curry leaves, turmeric powder, and red chili powder. Stir well.

Add the mashed potatoes to the pan and mix everything thoroughly. Add salt to taste. Cook for a few minutes and then set the filling aside.

Heat a non-stick pan or dosa tawa over medium heat. Pour a ladleful of dosa batter onto the pan and spread it in a circular motion to form a thin dosa.
