1Preheat your oven to 400°F (200°C).
Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel.
Pierce each potato several times with a fork to allow steam to escape during baking.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
While the potatoes are baking, heat the shredded chicken breast in a small saucepan over medium heat. Add the barbecue sauce and stir to combine. Cook until heated through, then remove from heat.
Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
Cut a slit down the center of each potato and gently squeeze the ends to open them up.
Fluff the inside of the potatoes with a fork, then divide the barbecue chicken mixture evenly among the potatoes.
Sprinkle the shredded cheddar cheese over the top of each potato.
Return the potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Remove the potatoes from the oven and top with chopped green onions and a dollop of sour cream.
Serve immediately and enjoy your Classic Barbecue Baked Potato!
