Preheat your grill to medium-high heat.
Pat the pork loin dry with paper towels. Rub it with 1 tablespoon (15ml) olive oil, 1 teaspoon salt, and 1 teaspoon black pepper.
Place the pork loin on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 63°C (145°F). Remove from the grill and let it rest for 5-10 minutes before slicing.
While the pork is grilling, prepare the mango salsa. Peel and dice the mangoes (400g). Finely chop the red onion (70g), jalapeño pepper (15g), and cilantro (8g).
In a medium bowl, combine the diced mangoes, chopped red onion, jalapeño, cilantro, and the juice of 1 lime (30ml). Mix well and season with a pinch of salt if desired.
Slice the rested pork loin and serve topped with the fresh mango salsa. Enjoy!
