Preparación
- 1
Preheat the oven to 175°C (350°F). Line a 20 cm (8-inch) square baking pan with parchment paper.
- 2
Add the eggs and granulated sugar to a large mixing bowl. Whisk until smooth and slightly foamy.
- 3
Whisk in the whole milk and vegetable oil until thoroughly combined.
- 4
Add the glutinous rice flour and baking powder. Whisk until the batter is smooth and no dry lumps remain.
- 5
Pour half of the batter into the prepared pan and spread it into an even layer.
- 6
Divide the sweetened red bean paste into small pieces or flatten it into a thin layer. Distribute it evenly over the batter, leaving a small border around the edges.
- 7
Pour the remaining batter over the red bean paste and gently smooth the surface.
- 8
Bake for 40–50 minutes, or until the top is lightly golden and the center is set. A skewer inserted into an area without red bean paste should come out mostly clean.
