1In a large mixing bowl, combine the self-rising flour and granulated sugar.
Melt the butter and add it to the flour mixture.
Gradually add the milk, stirring continuously until the batter is smooth.
Drain the mandarin oranges and gently fold them into the batter.
Heat a non-stick skillet or griddle over medium heat.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
Flip the pancake and cook for an additional 2-3 minutes, or until golden brown.
Repeat with the remaining batter.
Serve the pancakes warm, optionally garnished with additional mandarin oranges or a drizzle of syrup.
