In a mixing bowl, beat the 3 eggs with 150 grams of sugar until the mixture is light and fluffy.
Melt 80 grams of butter and let it cool slightly before adding it to the egg and sugar mixture. Mix well.
Gradually add 120 grams of flour to the mixture, stirring continuously to avoid lumps.
Zest the 3 mandarin oranges and add the zest to the mixture. Then, peel the mandarins, segment them, and remove any seeds.
Pour the custard mixture into a tart pan and arrange the mandarin segments on top.
Bake in the preheated oven for 25-30 minutes, or until the custard is set and the top is golden brown.
