Preheat your oven to 160°C (320°F).
Cut the pork belly into large chunks.

Remove the pork from the pot and set aside.

Stir in the soy sauce and brown sugar, and cook for another minute.
Add the red cabbage, stirring to coat it in the sauce.
Return the pork belly to the pot, nestling it among the cabbage.
Cover the pot and transfer it to the preheated oven.
Braise for about 2 hours, or until the pork is tender and the cabbage is soft.
Remove from the oven and let it rest for a few minutes before serving.
