Roasted Beetroot Pieces

   Preheat your oven to 400°F (200°C).

   Wash and peel the beetroots, then cut them into bite-sized pieces.

   Place the beetroot pieces in a large bowl and drizzle with 2 tablespoons of olive oil.

   Season with salt and pepper to taste, and toss until the beetroot pieces are evenly coated.

   Spread the beetroot pieces in a single layer on a baking sheet lined with parchment paper.
