1Rinse the yellow lentils thoroughly under cold water until the water runs clear.
In a large pot, add the lentils and 600ml of water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes until the lentils are tender.
In a separate pan, heat the vegetable oil over medium heat. Add the finely chopped onion and sauté until golden brown.
Add the minced garlic, grated ginger, and chopped green chilies to the pan. Sauté for another 2-3 minutes.
Stir in the ground cumin, ground coriander, ground turmeric, and garam masala. Cook for 1-2 minutes until the spices are fragrant.
Add the canned tomatoes and salt to the pan. Cook for 5-7 minutes until the tomatoes are well incorporated and the mixture thickens.
Pour the tomato and spice mixture into the pot with the cooked lentils. Stir well to combine.
Simmer the dal for another 10 minutes, allowing the flavors to meld together.
Garnish with chopped fresh cilantro before serving.
Serve hot with rice or naan bread.
